Process contaminants are generated by chemical modification of native components of oils and by entry of foreign components during extraction and refining. Improved methods of chemical analysis, as well as knowledge of potent effects of trace lipids highlight an opportunity to modify refining processes to improve the healthfulness of oils. This session explores some of the developing ideas in the processing and health realms.
